荷兰豆木耳爆炒乳鸽片

鸽肉一直被认为是滋补的食材,所谓的鸽脯就是去骨切片(连皮、不能太薄),而这次腌制过程会采用姜汁酒祛腥。

材料:鸽脯150克,荷兰豆200,木耳(水发后)100克,葱段20克,拍蒜15克,盐、糖、生抽、生粉、姜汁酒、花生油各适量。

做法:荷兰豆洗净,去筋焯熟备用;鸽子处理干净后去骨切片,以盐、糖、生粉、生抽、姜汁酒拌匀腌制;开锅下油,下鸽片大火翻炒至刚熟,沥干油分备用;另开锅下油,爆香拍蒜和葱段,下荷兰豆和木耳翻炒片刻,加入鸽片后继续快速翻炒,调味上碟即成,
